Colman’s english Prime rib

Serves: 2 to 4
1 2-rib tied prime beef rib roast (from small end, about 4 1/2 lb. trimmed)
1 1/2 tablespoons kosher salt
1 teaspoon black pepper
2 tablespoons all-purpose flour
PLACE beef fat side up and sprinkle all over with salt and pepper. Stir together flour and dry mustard and pat onto top and sides of
roast to form a thick coating.
ROAST beef 20 minutes. Reduce grill temperature and roast until thermometer inserted into center of meat registers 115°F. Transfer
beef to a cutting board and let stand, uncovered, 25 minutes. Meat will eventually reach 125°F (medium rare).
maytag Blue Cheese Dressing Recipe courtesy of Beth Anthony
Makes: 1 ½ cups
1/2 cup crumbled Maytag blue cheese
3/4 cup mayonnaise
1/2 cup apple cider vinegar
1 tablespoon sugar
1/2 cup sour cream
2 cloves garlic, pressed
IN A MIXING BOWL, whisk together all the ingredients except the Maytag blue cheese. The mixture should be very thin. With a wooden spoon
gently mix in the cheese. Serve over 1/4 wedges on iceberg lettuce.
